Zingy Chopped Salad

I absolutely love a good salad and this chopped salad is an excellent salad. This salad is packed full of protein. The pepperocinis provide an excellent crunch. The dressing gives just the right amount of zing.

To me this salad is a main dish salad and makes 4-6 servings. You could definitely use this as a side salad and get 8-10 small salad servings.

Excellent entree salad for lunch or dinner. You'll be satisfied and feel good after eating this!

Ingredients

For the salad

  • 1 head romaine lettuce chopped
  • 1 head radicchio chopped
  • 1 pint cherry tomatoes cut into quarters
  • 1 (15 oz) can chickpeas drained and rinsed
  • 8 oz mozzarella cut into 1/2 inch pieces
  • 4 oz provolone cut into 1/2 inch pieces
  • 4 oz Genoa salami chopped
  • 1/2 cup sliced pepperoni

For the dressing

  • 3 tbsp lemon juice
  • 2 tbsp red wine vinegar
  • 2 tsp chopped garlic
  • 1 shallot, diced
  • 1/2 cup olive oil

Instructions

  • In a small bowl, whisk together all ingredients for the dressing. Refrigerate until ready to use.
  • In a large bowl, combine all ingredients for the salad. Toss to mix well.
  • Pour 1/3 cup of the dressing over the salad. Toss to coat salad with dressing. Add more dressing if desired.
