Meal Plan: Week 14

BREAKFAST

  • Crunchy PB&J Toast (from Gentle Nutrition)
  • Smoothies

LUNCH

  • Pulled Pork Sandwiches (we smoked a pork shoulder this weekend)
  • Veggies Sandwiches

DINNER

  • Cheeseburger & Air-Fried French Fries
  • Chicken Wings with Carrot & Celery Sticks
  • Blackened Fish Tacos & Mango Salsa

Meal Plan: Week 11

I’ve decided to give myself a little cooking challenge/goal/inspiration. I’m going to cook my way through The Unofficial Disney Parks Cookbook. This little challenge/goal/inspiration makes my heart so happy! You see, I love Disney and had to cancel a Disney trip this past summer and I need some Disney in my life so I’m going to make it my house. Each week, I’ll cook at least one recipe from the cookbook and sometimes, like with this week, they’ll be part of my meal plan for the week.

BREAKFASTS

  • Smoothies.
  • Waffle with Peanut Butter and Banana.

LUNCHES

DINNERS

  • Corn Dog Nuggets (from the Disney cookbook). Salad.
  • Chicken Tawook Quinoa Bowls.
  • Pork Belly Skewers (from the Disney cookbook). Grilled Veggies.
  • BLT. Fruit.

SNACKS

  • Fig Bars.
  • Veggies & Dip.

I’m also planning to make The Grey Stuff and Dole Whips from the Disney cookbook. I’ll be sharing my adventures over on instagram and may even blog about them.


Meal Plan: Week 10

I feel like I’m getting back into the swing of meal planning. I don’t know why but that winter storm and the inability to do my typical meal planning routine threw me off. Meal planning is definitely a tool that helps me feel less stressed for the week.

Here’s what’s on the menu this week…

BREAKFAST

  • Smoothies.
  • Egg scrambles.

LUNCH

DINNER

  • Steak. Baked potato. (I’m making my own steak seasoning this time. Wish me luck!)
  • Griddle sandwiches (from PW’s The New Frontier Cookbook). Grapefruit.
  • Baked spaghetti. Salad.
  • Chilaquiles (I’ll probably modify this recipe a little bit).

Meal plan: Week 8 & 9

Well, as predicted when I first started this meal planning series, life happened. Actually, snow happened. The week after we had snow here in Texas getting a grocery delivery order or a grocery pick-up order was impossible and I decided we were going to have a clean out week. Meals were strange but we used up a lot of stuff that had been hanging out in the freezer.

Week 9 (this week) is a little bit better planned.

BREAKFAST

  • Egg scrambles. Toast.
  • Yogurt. Granola.

LUNCH

  • Black bean wraps. Fruit. (Black bean wraps are tortillas, black beans, cheese, and salsa. I microwave the tortilla with the black beans and cheese for 10-15 seconds, top with salsa, roll-up, and enjoy.)
  • Black bean burrito bowls with couscous instead of rice.

DINNER

SNACKS

  • Fig bars.
  • Chocolate.
